Because All That Butter Just Wan't Enough

I have to admit I'm not terribly humble I make a mean Alfredo sauce. I don't make Chicken Fettuccine Alfredo often because - fat. This recipe is not even joking around about its fat content. We're talking two whole sticks of butter. Two 15 ounce containers of WHOLE ricotta cheese. One pint of heavy cream and a whole cup plus a little more for good measure of grated Parmesan cheese. Freshly grated of course. And when it comes time to physically apply cheese to grater you're all, why didn't I just buy the Kraft pre-grated stuff? Then you remember - flavor. One thing missing from the recipe that I follow is garlic.

I'd like to introduce you to a permanent staple in my fridge:


I sautee one teaspoon of this with the chicken before adding it to the sauce. One teaspoon is all you need because you want to wake up the flavor; you don't want to scare the shit out of it. A little of this stuff goes a long way.

After you recruit your mother to grate the cheese, and your sister to make the salad, and your other sister to pour everyone's drink, and you enjoy your second cup of coffee - dinner is served. You don't worry that you've just forced yourself to finish the entire bowl of rich and heavy Alfredo you were served; or that you sopped up the remaining sauce with a soft buttery roll, or that you didn't actually have any room to finish the salad after that carbohydrate orgy, because you still have three weeks to lose those five pounds that will give you permission to gain it all back come Thanksgiving.

It sounds divine. Everyone needs a fat attack at least once a week. Pasta is my favourite way.

I am very intrigued by this recipe of yours... totally into it. I cook with too much butter, cream and eggs. It will come back to haunt me... someday.

I LOVE alfredo, but I typically only eat the "real" stuff on special occasions because, yeah, the fact that my ass wants to fit into my jeans.

At home I use the campbells's cream of mushroom and garlic soup! Still pretty good, but 98% fat free. Guiltless eating, with no complaints from my hiney.

Recently as I've started into my collection of "Sinfully Southern Recipes", getting them out of my head onto the keyboard has totally sent me into butter, fat, and sugar shock! I've been cooking like this since I was taught growing up, but never really stopped and thought how bad they all are as far as unhealthy ingredients. Even my southern super sweet tea contains 2.5 cups REAL sugar per gallon!

I *try* to tell myself all the love I put into it cancels all the bad stuff out... and at least I cook! LOL

I have said for years:

"My fantasy is to wake up one day and be so so thin that a doctor will tell me I have to eat my way back to a healthy weight. And then I will eat Fettichini Alfredo for every meal until I reach the goal weight"

Danger Boy is taking a cooking class--Fettucine Alfredo is on our menu for Thursday night. He wanted to make it on a night I wasn't home and I was all Hello? I'd looooove to eat a dinner prepared by someone else!

Oh, I adore a good Alfredo, even though its a "heart attack on a plate". But such a delicious one!!

I'm a sucker for macaroni and cheese, which is basically a down-home cousin of Alfredo.

We are butter-eaters, too - no margarine in our house. Butter and olive oil.

ALfredo with chicken and broccoli is my absolute favorite pasta dish. A couple slabs of sourdough and I'm in carb heaven!

HOLY FAT I can't wait to eat my body weight on Thanksgiving. Also this post made me drool. Maybe because its 5:22 p.m. and I'm staving. Maybe because it looks like a fantastic recipe that I now must try. Or maybe because I just have a drooling problem.

Stouffer's makes a passable Lean Cuisine Fettuccine Alfredo, good in a pinch. Biut i love your communal cooking concept.
